Yakisoba
A very delicious Japanese style fried noodles that is so easy to make at home for your loved ones.
There are many commercial Yakisoba sauce available in the markets, but I prefer to make my own using what’s commonly available at home. Besides my recipe, I’ve attached those (not so pretty) step by step photos. Try it! .

Serves 2
Ingredients:
2 packs of 170g Ituski noodles
120g chicken mince
3 to 4 leaves of cabbage, sliced
1/2 carrot, julienned
1/2 cup of fresh button mushrooms
1/2 onion, sliced
2 stalks green onion; white parts cut into inch long, green parts chopped

Seasoning for meat:
Season chicken mince with 2 teaspoon of light soy sauce, and a pinch of salt and pepper. Mix well. .

Seasoning sauce for noodles:
3 tbsp light soy sauce
1 to 2 tbsp brown sugar
1 tbsp oyster sauce
1 tbsp ketchup .

Others:
2 tbsp vegetable cooking oil
.
Method:
1. Blanch the noodles quickly in boiling water to loosen up the noodles. Drain the noodles then set aside.
2. Add cooking oil into frying pan, stir fry chicken mince until loosely separated.
3. Add onions, green onions (white parts), mushrooms, carrots, cabbage to stir fry until the veggies are soften but still retain the crisps.
4. Add noodles to combine with all ingredients, then pour the seasoning sauce over. Toss the noodles to mix well and allow to heat through.
5. Add chopped green onions and serve immediately with Japanese pickled ginger. .
