The oyster omelette is a popular dish widely known across Asia, commonly seen in countries like Taiwan, Hong Kong, Singapore, Malaysia, and even Indonesia. Its taste and appearance differ for different countries, with each having their own variation.

One might think that from its name, oyster omelette, it is a type of dish that consist of scrambled eggs and oysters. The Asian oyster omelette is nothing similar to Western omelette, other than the eggs and oysters, it has a roux of sweet potato or tapioca starch that gives it a chewy texture!
